We serve this in the jucie bar and have lots of people asking for the recipe – so here it is.
1 ½ Cups self raising flour
2 cups of mixed fruit
4 oz margarine
½ teaspoon vanilla essence
¼ cup sugar or less if you so desire (we always put less as we don’t think it needs it)
¼ cup coconut
2 beaten eggs
½ tsp mixed spice
Mix all dry ingredients together, add vanilla and beaten eggs
Press into a tin
Bake for 35 minutes at 375 degrees F or 200 degrees C
You can add a topping of delicious coconut cream and oranges blended together, poured over the top and then put into the fridge to set!
